Introducing our Latest Releases of The Octave

From the team who pioneered maturation in octave casks, we are proud to introduce our latest additions to The Octave Collection.

After a relatively short period in octave casks these whiskies have matured well beyond their years. The smaller cask allows a more rapid melding of wood, air and alcohol, enhancing the spirit's hue, taste, form and character. The flavour profile is gently expanded, a little more sophisticated, with the commanding presence of a mature well-balanced Scotch whisky.

Here's what our Tasting Panel say about the new releases:

Ardmore Peated
2008 10YO 54.1%

Before:
Peat, pouring cream, lemon zest, bonfire smoke and apple skins.

After Octivation:
Colour: Antique gold
Nose: Poached pear and cherry lips.
Taste: Hickory smoked peanuts. Silky.
Finish Smoky satay sauce and BBQ. Long with gentle spice.

Bunnahabhain
2008 10YO 53.9%

Before:
Seaweed, sweet herbs,white chocolate, orange zest and prunes.

After Octivation:
Colour: Old gold
Nose: Soft and sweet with ginger notes.
Taste: Sour cherry and dark chocolate. Rich and chewy sherry.
Finish: Less fruit, more savoury with medium length.

Bunnahabhain Peated
2014 4YO 53.8%

Before Octivation:
Peaty, smoky, seaweed, burnt embers and salted crisps.

After Octivation:
Colour: Antique gold
Nose: Creme brulee, soft coastal notes, nori, and feint smoke.
Taste: Malted milk biscuits and wet peat. Gentle but powerful.
Finish: Smoky coastal notes reemerge. Warming and surprisingly long.

Highland Park
2006 12YO 54.0%

Before:
Sweet citrus, seaweed, wet smoke, salty and malt biscuits.

After Octivation:
Colour: Antique gold
Nose: Savoury, tartiflette, lean and muscular.
Taste:Apricots, umami, clean and flinty with gentle coastal notes.
Finish: Soft white pepper. Dry and medium to long with balanced tannins.

Highland Park
2007 11YO
53.6%

Before:
Heather honey, frruiy, peppery, hardened caramel and seaweed.

After Octivation:
Colour: Antique gold
Nose: Maple syrup, grassy, olive oil and liquorice.
Taste: Dry sherry, cloves, grassy.
Finish: Hint of aniseed fading to heather honey with a whiff of smoke.

Invergordon
2007 12YO 53.4%

Before:
Clean, fresh, green apples, malty and toasted oak.

After Octivation:
Colour: Amber
Nose: Sweet almonds with soft herbal notes and a hint of herbs.
Taste:Icing sugar and stone fruits. Not over sweet.
Finish: Gentle and warming. Spice fades and sweetness returns.
